If there's one thing that's essential in January, it's comfort food. Nothing is quite so nice when the weather is cold than a big mug of tea or a steaming bowl of soup. Today's post is centered around one favorite comfort food: dumplings.
In Little House on the Prairie, Ma served up stewed jackrabbit with white-flour dumplings when Mr. Edwards stayed for supper. In this modern day, you might substitute chicken for jackrabbit. (Chicken and dumplings was my favorite dish growing up, and I can't think of it without remembering how my mom cooked it just for me. Yum!)
Here's a recipe for dumplings that you can add to any soup. When Ma cooked with white flour, it was because she wanted to pamper her company. Whole-wheat flour, cornmeal, or some other "inferior" grain was reserved for everyday fare. These days, though, white flour is cheap both in price and nutritional value. How times have changed! I wonder if you could substitute whole-wheat flour in the dumpling recipe to make it healthier?
