Parched corn

Countdown: Six days until Thanksgiving! 

The latest food in my Holiday Recipe Bonanza is sort of unusual: parched corn.

In her "Little House" books, Laura Ingals Wilder mentioned a family Thanksgiving tradition - at Thanksgiving, each person ate three kernels of parched corn before the meal. They did this to remember the Pilgrims, who, in a probably apocryphal story, had nothing to eat but parched corn until the Indians arrived with the food for the first Thanksgiving meal.

You can season the parched corn with salt, your favorite season salt or spices, or even brown sugar. Once it's done, keep it for a quick, portable snack, or enjoy it with your Thanksgiving meal.
