Birds'-nest pudding

I have to be honest: when I read about a dish known as "birds'-nest pudding" in Farmer Boy, I imagined an old-fashioned and probably non-so-delicious food. I mean, how good could something named after a bird's nest really taste?

I decided to write a LHCO post about the pudding and started searching for recipes and references. Much to my (pleasant) surprise, I discovered that "birds'-nest pudding" is made by stuffing apples with brown sugar, covering them in a rich crust, baking until golden brown, and serving with sweetened cream and nutmeg. My mouth started watering at the delicious potential of this dish. If I had a kitchen right now, I would make birds'-nest pudding POSTHASTE to make sure that it was as yummy as it looked.
Here are a couple recipes in case you want to try birds'-nest pudding for yourself:
A modern recipe adapted from the Little House Cookbook
An 1894 recipe for historical reference

Enjoy!
