First question this post needs to address is, "What exactly is buckwheat?" I'll defer to the Wikipedia article for the nitty-gritty details, but here's the gist:
Buckwheat is a grain-like plant grown for food and other miscellaneous uses. It's not related to wheat; rather, it's taxonomically closer to sorrel and rhubarb. Its name comes from a Middle Dutch word that meant "beech wheat". Buckwheat has an earthier taste than most grains we're used to.
Almanzo Wilder enjoyed buckwheat pancakes for breakfast in Laura Ingalls Wilder's Farmer Boy. Here's a recipe for buckwheat pancakes. These particular ones are made with half buckwheat flour and half wheat flour, so the taste will be milder than straight buckwheat. Enjoy them with butter and brown sugar or maple syrup. Yum!
