A Sour Subject

You might think of homemade vinegar as the exclusive domain of hippies. Maybe you've heard of the brand below and its cult following many fans... However, apple cider vinegar is also well known to hardcore "Little House" fans. It is possible to make your own vinegar at home, which reportedly has better flavor and . Although I haven't tried making some yet, you can find instructions in Barbara M. Walker's Little House Cookbook. If I remember correctly, this is a great way to put apple cores to use. The vinegar-making process is kind of like sourdough in that you have a bacterial "mother" which imparts the vinegariness to each new batch of vinegar.
 In Laura Ingalls Wilder's childhood, homemade vinegar was the only vinegar around. Vinegar is mentioned several times in her books. Remember the time when Ma made ginger water for Pa and Laura? Vinegar was also a common ingredient in pies and other dishes in the Ingalls home.
