Remember in Little House in the Big Woods, when Grandma made hasty pudding? For a long time I wondered what hasty pudding really was, and why it was in such a hurry.
As it turns out, hasty pudding is simply porridge made of corn, and it actually can't be cooked in haste. Wikipedia has some interesting information about specific varieties and variations of the pudding, as does the Little House Cookbook.

Eliza Leslie's Directions for Cookery, in its Various Branches (1840) includes recipes for "Flour Hasty Pudding" and "Indian Mush".
Cooks.com has a modern recipe for hasty pudding.
Many recipes note that you can chill any leftover porridge, slice it the next day, and fry it. What a very "Little House"-ish way to make leftovers lovely!
