Leftovers??

Were you fortunate enough to have leftover mashed potatoes from your Thanksgiving meal yesterday? Have no fear: I have the perfect use for them! Combine the mashed potatoes with egg(s), salt and pepper, and maybe a little cheese or green onion, then fry them up to make delicious potato pancakes. These are so easy to make and a real favorite with my family whenever we have leftover potatoes. If you're a recipe-follower, here's a simple recipe for potato pancakes.

(P.S. You can also make sweet potato pancakes! You may have to add some flour along with the egg to get the consistency right, and you'll want to include spices like cinnamon and nutmeg. Sweet potato pancakes are so delicious and just as easy as regular potato pancakes.)
Now that Thanksgiving is over, it is time to begin celebrating the Christmas season. Let those Christmas carols play! String up those garlands!
